If someone knows how to make sub-folders (blue iconed ones, ie: https://github.com/x-cord/conan, fonts, subs, tools ) in GItHub please tell me how so that I can assort and move these to a separate folder in my repository

Do a bit of reading on what Git is (push, pull, merge) and you'll understand the blue iconed "sub-folders". tl;dr, it's just like a regular filesystem, but I imagine you're trying to manage everything through the GitHub website, which isn't really how Git should be used.
